Crisp Radish in vinegar

Radishes are one of those things in my garden that I harvest all at once and struggle to use up. Pickling is the perfect way to have that crunchy, peppery bite all throughout the year. Whether in salads or on a sandwich, these bring a tangy, crisp flare to any dish. While this recipe is written for a pint jar, you can easily pickle any amount of radish you have in the pickling liquid you make.

Pickled Radish

makes: 1 pint jar
Ingredients
- 20-25 radishes
- 2 cloves of garlic, roughly chopped
- 1 bay leaf
- 3/4 c apple cider vinegar
- 3/8 c water
- 1/2 tsp salt
- 1 tbsp sugar
Directions
- Thinly slice the radish and place in a pint jar until full.
- In a small saucepan mix the remaining ingredients
- Over medium heat, bring to a boil and boil for a minute
- Pour the mixture into the jar to cover the radishes and allow to cool and store in the refrigerator.
- For best flavor, refrigerate for a day before use.
