Pickled Radish

Radishes are one of those things in my garden that I harvest all at once and struggle to use up. Pickling is the perfect way to have that crunchy, peppery bite all throughout the year. Whether in salads or on a sandwich, these bring a tangy, crisp flare to any dish. While this recipe is written for a pint jar, you can easily pickle any amount of radish you have in the pickling liquid you make.

Pickled Radish

makes: 1 pint jar


Ingredients

  • 20-25 radishes
  • 2 cloves of garlic, roughly chopped
  • 1 bay leaf
  • 3/4 c apple cider vinegar
  • 3/8 c water
  • 1/2 tsp salt
  • 1 tbsp sugar

Directions

  1. Thinly slice the radish and place in a pint jar until full.
  2. In a small saucepan mix the remaining ingredients
  3. Over medium heat, bring to a boil and boil for a minute
  4. Pour the mixture into the jar to cover the radishes and allow to cool and store in the refrigerator.
  5. For best flavor, refrigerate for a day before use.
