arugula, artichoke, radish and goat cheese with a light refreshing dressing

Salad season is here for me. Summer is in the air and the garden is starting to produce a bounty of fresh vegetables. This salad utilizes the first fruits of the garden – arugula and radishes. The peppery flavors they bring are accented with the more mellow artichoke and the creaminess of goat cheese. Topped off with a light sweet honey balsamic dressing, this salad is a refreshing side to any meal.

Arugula and Artichoke Salad

Ingredients
- 6 c arugula
- 1 (14 oz) can of artichoke harts
- 4 radishes
- 1/4 c goat cheese, crumbled
dressing
- 1/8 c olive oil
- 2 tsp balsamic vinegar
- 2 tsp honey
- 1 tsp finely chopped mint
- 1/4 tsp salt
Directions
- Drain the artichoke hearts and roughly chop the artichoke into bite sized pieces
- finely chop the radishes
- In a separate bowl, whisk the dressing ingredients together until well combined.
- In a large bowl combine all the salad ingredients and pour the dressing over and toss until well mixed and coated
- Serve
