Slow Venison Stew

Hearty aromatic stew vegetables, venison, and barley.

Amid the snow and chill of winter, hearty stews are a must. This one is so simple – just dump the ingredients in a crockpot and let time and low heat work its magic. Be prepared to be tantalized by the aromas of herbs tomatoes wafting through your home.

Note that if you don’t have access to venison, you can substitute beef for this recipe.

Slow Venison Stew

makes: 20 c


Ingredients

  • 1.5 lb venison
  • 1 c diced sweet onion
  • 2 1/2 c sliced carrot
  • 1 1/2 c cellery
  • 4 c quartered button mushrooms
  • 1 1/2 c diced potatoes
  • 3 c diced tomatoes (or 2, 15oz cans)
  • 1/4 c barley
  • 1/8 c port
  • 1 1/2 c water
  • 1 bay leaf
  • 1/8 tsp pepper
  • 2 1/2 tsp salt
  • 2 tsp thyme
  • 2 tsp garlic powder
  • 1/2 tsp oregano
  • 1/4 c fresh parsley
  • 2 tsp rosemary
  • 1 tsp basil paste

Directions

  1. Put all ingredients in a large crockpot.
  2. Cook on low for roughly 10 hours or on high for 5 hours. Stir occasionally if desired to make sure seasonings are well incorporated.
  3. Break apart meat with a fork and stir to combine.
  4. Serve.
