rich and creamy holiday drink

Nothing tops eggnog for a festive holiday drink. Rich and delicious, it is a tradition in our house around Christmas. My dad, who has long inspired me in the kitchen developed this recipe, and I can’t remember a Christmas without it. If you have had storebought eggnog and don’t like it, I challenge you to try this recipe. It’s one of those foods where you just can’t get close with the storebought version.
The recipe is actually quite simple. The only challenge is making sure you are diligent in stirring so you don’t get any clumps. Even if you do, it’s not the end of the world. A quick strain through a sieve can remove them if there are only a few. While simple in ingredients, it is full of flavor. Top with a dash of nutmeg or a splash of Irish cream liqueur if desired or just sip it plain with your favorite Christmas cookies.

Eggnog

Ingredients
- 18 eggs
- 1 gal whole milk
- 2 1/2 c sugar
- 8 tsp vanilla
- 1/4 tsp salt
- 1 c heavy whipping cream
- nutmeg (optional)
- Irish cream (optional)
Directions
- In a large pot on the stove on medium heat, heat the milk until it begins to steam and small frothy bubbles start forming along the edge of the pan, about 10 minutes.
- While the milk is heating, whisk the sugar, salt, and eggs together until well combined and slightly lighter in color.
- Prepare and ice bath in the sink.
- Add 4 cups of hot milk to the egg mixture, one cup at a time, stirring well between each addition.
- Pour the egg mixture into the remaining milk, stirring well during the addition.
- Heat the eggnog mixture on medium heat stirring constantly until it reaches a temperature of 175 degrees Fahrenheit (approximately 15 minutes). While stirring, be sure to stir around the edges of the pan as well as though the center.
- Once the temperature is reached, place the pot in the ice bath.
- Add the vanilla and stir.
- Allow to cool, adding ice as needed and stirring occasionally. Then cover and refrigerate until cold.
- Before serving, beat the whipping cream on high until medium soft peaks form and fold into the eggnog mixture.
- Serve with a splash of Irish cream and/or nutmeg as desired.
