Lentil Soup

This lentil soup is my favorite way to eat lentils. Perhaps it’s a bit nostalgic – I adapted this recipe from the way my mom would make lentils growing up – but it also is simply delicious. When you need a hearty and healthy soup, look no further.

Lentil Soup

Ingredients

  • 6 1/2 c water
  • 2 chicken bouillon cubes
  • 1 bay leaf
  • 1/2 tsp garlic powder
  • 1 1/2 tsp cumin
  • 1 t coriander
  • 1 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 c sweet onions, chopped
  • 2 c celery, chopped
  • 1 1/2 c carrots, chopped
  • 1 1/3 c lentils

Directions

  1. Start heating on high heat the water and the seasonings in a large pot.
  2. Prep the vegetables and add them to the water.
  3. Once the water begins to boil, add the lentils.
  4. Boil the lentils on medium high heat until soft, about 20-25 minutes.
  5. Remove from heat and serve.
