earthy lentils and vegetables in a flavorful broth

This lentil soup is my favorite way to eat lentils. Perhaps it’s a bit nostalgic – I adapted this recipe from the way my mom would make lentils growing up – but it also is simply delicious. When you need a hearty and healthy soup, look no further.

Lentil Soup

makes: 7-8 servings
Ingredients
- 6 1/2 c water
- 2 chicken bouillon cubes
- 1 bay leaf
- 1/2 tsp garlic powder
- 1 1/2 tsp cumin
- 1 t coriander
- 1 1/2 tsp oregano
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 c sweet onions, chopped
- 2 c celery, chopped
- 1 1/2 c carrots, chopped
- 1 1/3 c lentils
Directions
- Start heating on high heat the water and the seasonings in a large pot.
- Prep the vegetables and add them to the water.
- Once the water begins to boil, add the lentils.
- Boil the lentils on medium high heat until soft, about 20-25 minutes.
- Remove from heat and serve.
