Chocolate Cherry Chip Cookies

Double chocolate cookie with cherries & white chocolate drizzle

Too many chocolate cookies leave something to be desired. To dry, or maybe not enough chocolate flavor. I wanted a chocolate cookie that ticked all the boxes. Something rich, with something with a bit of tartness to accent. Something chewy and soft. These cookies were the result. Rich chocolate. Tart cherries. Sweet drizzle. All you could want in a cookie.

These cookies follow a standard creaming method for mixing up the dough where the sugar and butter are beaten then the wet ingredients are added followed by the dry and lastly any chunky bites like the cherries or chocolate chips. The dough for this cookie is slightly softer than a regular chocolate chip cookie. Don’t worry – the cookie will turn out just fine. As you finish baking the cookies, remember to not over bake. Baking a chocolate cookie is a little trickier as you cannot see the cookie turning brown as an indicator. How do you know when they are done then? The center should be just set (not wet and sticky) but still soft. If in doubt, error on the side of pulling them earlier. Remember, they will continue to bake on the tray as they cool.

The white chocolate drizzle makes these cookies pop visually, but if you don’t have time, you can mix the white chocolate into the dough or omit. To drizzle you can dip a fork or spoon into the white chocolate and shake across the surface of the cookie. Alternatively, you can put the melted white chocolate in a plastic bag and cut a small whole in the corner and squeeze to drizzle over the cookies.

Chocolate Cherry Chip Cookies

Ingredients

  • 2 sticks of salted butter, softened
  • 1 1/3 c granulated sugar
  • 2 eggs
  • 1 tsp molasses
  • 1.5 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1 3/4 c flour
  • 1/2 c cocoa powder
  • 1 c roughly chopped dried cherries
  • 1 c semi-sweet chocolate chips
  • 1/2 c white chocolate chips (optional)

Directions

  1. Preheat the oven to 350 degrees Fahrenheit
  2. In a mixing bowl, beat the sugar and butter together on medium speed until well creamed, about 3 minutes.
  3. Add the eggs, molasses, vanilla, and salt and mix until combined.
  4. In a separate bowl, mix flour, baking soda, and cocoa until homogeneous
  5. Add the dry ingredients to the wet and mix until just combined.
  6. Add in the roughly chopped dried cherries, and semi-sweet chocolate chips; mix until just combined.
  7. Scoop by the tablespoon onto an ungreased cookie sheet.
  8. Bake for 15 minutes until the center is just set.
  9. Remove from the oven and cool for 2 minutes on the tray before moving to a cooling rack.
  10. Melt the white chocolate and drizzle on top of the cookies and allow to harden before cooling.
