colorful vegetables tossed with a Mexican inspired dressing

This fresh salad is inspired by the flavors of Mexico with its cumin, coriander and cilantro spices/herbs. It is one of my favorite recipes to pair with any Mexican inspired dish from enchiladas to tacos. It is also incredibly easy to make. Simply dice up the vegetables and whisk up the dressing and mix it all together!
Quick. Healthy. Easy. Delicious. There’s not much more you could ask for.

Fresh Mexican Salad

Ingredients
Salad
- 1 pint cherry tomatoes (halved)
- 1 orange bell pepper (diced)
- 1 avocado (diced)
- 1 1/2 c frozen corn (thawed)
- 1 (15 oz) can of black beans (drained and rinsed)
- 1/2 c finely diced red or sweet onion
- 1/2 c cilantro (finely chopped)
Dressing
- 1/4 c olive oil
- 1/8 c lime juice
- 1/2 tsp garlic powder
- 1/4 tsp coriander
- 1/2 tsp cumin
- 1/2 tsp salt
- dash of pepper
Directions
- Prep vegetables by chopping into desired sizes as outlined in the ingredient section.
- Whisk the dressing ingredients together.
- Toss the salad and dressing and serve.
