Quick Bread Pudding

A delicious dessert doesn’t need to be complicated. There is nothing like the simpleness of a warm chocolate chip bread pudding that is quick to mix up with ingredients that one usually has on hand.

Bread pudding is a versatile dessert of cubed bread soaked in a flavored custard, then baked and served with a sauce poured over the top. It’s so fun to play with and create new flavors, but here we go back to the basics. This recipe is for one of its most simple forms.

Simply whisk the ingredients together in a large bowl, add the bread, and chocolate chips, put in baking dishes, and in less than 5 minutes, you are ready to bake!

The only key preparation note I want to give is to make sure to not overbake this dessert. It is supposed to be soft and custardy! Keep an eye on it the first time you make it so you can pull it out at the right time. The center just needs to be set for it to be done – if you push gently on the top in the center, you shouldn’t see any liquid squeezing out, but it should be a bit squishy still. If you bake it too long, it will dry out and not be as deliciously soft and creamy.

This dessert is easy to prep and pop in the oven right before sitting down to dinner so that you can pull it out and serve warm. While I usually serve with browned butter over the top, you can also serve with a scoop of vanilla ice cream. Simple, easy, and oh so good.

Quick Bread Pudding

Ingredients

  • 2 c cubed old bread
  • 1 egg
  • 1 c milk
  • 2 tbsp sugar
  • 1/2 tsp vanilla
  • 1/8 tsp of salt
  • 1/8 c mini chocolate chips
  • 2 tbsp of salted butter

Directions

  1. Whisk together the eggs, milk, sugar, vanilla, and salt.
  2. Stir in the cubed bread, and allow to sit for 1 to 2 minutes to absorb the liquid.
  3. Stir in the chocolate chips.
  4. Divide into four greased 1/2 c ramekins.
  5. Bake for 40 minutes or until the center is set.
  6. On the stove, melt the butter on medium low until golden brown.
  7. Serve the bread pudding warm from the oven with the browned butter poured over the top.
